Ingredients

For the Seasoning
  • 1/4 cup brown sugar
  • 1/2 tsp cayenne powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
For the Pork Chops
  • 2 Tbsp olive oil
  • 4 thick cut boneless pork chops about 3/4-inch thick

Equipment

  • Oven-safe skillet
  • Small bowl
  • Measuring cups and spoons
  • Meat thermometer

Method

  1. Preheat your oven to 350ºF.
  2. In a small bowl, combine the brown sugar, cayenne pepper, garlic powder, paprika, salt, and black pepper.
  3. Remove the pork chops from their package and rub the seasoning mixture over all sides of each chop. The moisture from the meat will help the seasoning to stick.
  4. Heat olive oil in a large, oven-safe skillet over medium heat. When the oil shimmers, add the pork chops. Cook for about 5 minutes on each side, until browned.
  5. If your chops are thicker than one inch, transfer the skillet to the preheated oven. Cook for another 5-10 minutes, or until a meat thermometer reads 145ºF internal temperature. Cook longer if needed.
  6. Dredge the chops through the sauce in the bottom of the pan just before serving.

Notes

Use boneless pork chops for this recipe. Aim for chops that are about 3/4-inch thick to ensure they cook through quickly without the glaze burning.
