Ingredients

For the Au Jus
  • 1 cup drippings from a prime rib roast or smoked prime rib or grilled prime rib
  • 1 cup beef broth
  • 1-2 tablespoons dry red wine
  • 1 tablespoon Worcestershire sauce
  • 1 pinch kosher salt
  • 1 pinch ground black pepper

Equipment

  • Small saucepan
  • Roasting pan

Method

  1. Combine the prime rib drippings, beef broth, red wine, Worcestershire sauce, salt, and pepper in a small saucepan. Make sure to scrape all the bits and juices from the bottom of your roasting pan into the saucepan.
  2. Bring the mixture to a boil, then reduce the heat to a simmer.
  3. Let it simmer for 10-15 minutes, or until the sauce has reduced by about one-quarter.
  4. Remove the saucepan from the heat and let the au jus cool. Once cooled, scrape off any fat that has floated to the top.
  5. Serve the au jus with your favorite prime rib recipe.
