- Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, season chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not let it burn.
- Pour in heavy cream and bring to a gentle simmer. Whisk in grated Parmesan cheese, black pepper, and salt. Cook, whisking constantly, until sauce thickens slightly, about 3-5 minutes.
- Return the cooked chicken to the skillet. Add the drained fettuccine to the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
- Serve immediately, garnished with fresh chopped parsley.

Notes
For extra spice, add a pinch of cayenne pepper to the sauce. You can also add cooked shrimp or vegetables like broccoli or bell peppers.
