Red White and Blue Icebox Cake

Ingredients
  

For the Cake
  • 2 packages graham crackers about 14-16 crackers per package
For the Cream
  • 2 cups heavy whipping cream cold
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

Equipment

  • 9x13 inch baking dish
  • Electric mixer
  • Spatula

Method
 

  1. Line the bottom of a 9x13 inch baking dish with a single layer of graham crackers. Break crackers as needed to fill any gaps.
  2. In a large bowl, beat the cold heavy whipping cream with an electric mixer on medium-high speed until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract to the whipped cream. Continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Arrange half of the sliced strawberries and half of the blueberries over the whipped cream.
  6. Add another layer of graham crackers on top of the fruit.
  7. Spread the remaining whipped cream mixture over the second layer of graham crackers.
  8. Top with the remaining strawberries, blueberries, and all of the raspberries.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften.
  10. Slice and serve chilled.

Notes

You can substitute other berries like blackberries if desired. Ensure all fruit is dry before adding to prevent excess moisture.
