Ingredients
  

For the Casserole
  • 1 pound bacon, sliced and diced
  • 1 medium sweet onion, chopped
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1-1/2 cups 4% cottage cheese
  • 1-1/4 cups shredded Swiss cheese

Method
 

  1. Preheat your oven to 350°F (175°C). In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crisp. Drain off any excess grease.
  2. In a large bowl, combine the lightly beaten eggs, thawed hash brown potatoes, cottage cheese, cheddar cheese, and Swiss cheese. Stir well to mix all ingredients.
  3. Add the cooked bacon and onion mixture to the bowl with the other ingredients and stir to combine.
  4. Transfer the mixture to a greased 13x9-inch baking dish.
  5. Bake uncovered for 35-40 minutes, or until a knife inserted into the center comes out clean.
  6. Let the casserole stand for 10 minutes before cutting and serving.
