- Preheat your oven to 350°F (175°C). In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crisp. Drain off any excess grease.
- In a large bowl, combine the lightly beaten eggs, thawed hash brown potatoes, cottage cheese, cheddar cheese, and Swiss cheese. Stir well to mix all ingredients.
- Add the cooked bacon and onion mixture to the bowl with the other ingredients and stir to combine.
- Transfer the mixture to a greased 13x9-inch baking dish.
- Bake uncovered for 35-40 minutes, or until a knife inserted into the center comes out clean.
- Let the casserole stand for 10 minutes before cutting and serving.
