  • 4 pork chops bone-in or boneless, at least 1-inch thick
  • 2 tablespoons extra virgin olive oil
For the Seasoning
  • 1 tablespoon paprika
  • 1 tablespoon coconut sugar or brown sugar
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1.5 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). In a small bowl, stir together the paprika, coconut sugar, garlic powder, onion powder, dried oregano, salt, and pepper to make the seasoning.
  2. Place the pork chops in a baking dish or on a rimmed baking sheet. Drizzle the olive oil on both sides of the pork chops. Sprinkle the seasoning evenly on both sides, then rub it in.
  3. Bake the pork chops uncovered for 15 to 20 minutes. Use an instant-read thermometer to check for an internal temperature of 145°F (65°C). Let the pork chops rest for 5 minutes to ensure they remain juicy. Spoon any pan juices over the top before serving.
