Rich and Hearty Shepherd's Pie

Ingredients
  

For the Filling
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup ketchup
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
For the Topping
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in a saucepan until tender. Drain and mash with milk, butter, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  4. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the beef broth and ketchup. Stir in the Worcestershire sauce and thyme. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  6. Stir in the frozen peas and corn. Remove from heat.
  7. Spread the beef mixture evenly in the bottom of a baking dish.
  8. Spoon the mashed potatoes over the beef mixture, spreading to cover completely. You can create decorative peaks with a fork if desired.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let stand for a few minutes before serving.

Notes

For an extra layer of flavor, you can add a tablespoon of tomato paste with the ketchup. If you don't have fresh potatoes, you can use about 2 cups of prepared mashed potatoes.
