Ingredients
  

For the Muffins
  • 1/2 pound bulk pork sausage
  • 12 large eggs
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese

Method
 

  1. Preheat your oven to 350°F (175°C). Grease 12 muffin cups.
  2. In a large skillet, cook the pork sausage over medium heat until it is no longer pink. Break the sausage into crumbles as it cooks. Drain off any excess grease.
  3. In a large bowl, beat the eggs. Add the chopped onion, green pepper, salt, garlic powder, and pepper. Stir in the cooked sausage and shredded cheddar cheese.
  4. Spoon the mixture by 1/3 cupfuls into the prepared muffin cups.
  5. Bake until a knife inserted into the center of a muffin comes out clean. This will take 20-25 minutes.
