- In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
- Add the sliced bell peppers and onion to the skillet with the sausage. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes.
- Stir in the minced garlic and dried oregano. Cook for 1 minute more until fragrant.
- Season with salt and black pepper to taste.
- If using, add the chicken broth and diced tomatoes. Bring to a simmer and cook for another 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Serve hot. This dish is great on its own, over pasta, or in a hoagie roll.
Notes
For a spicier dish, use hot Italian sausage and add a pinch of red pepper flakes with the garlic.
