Sausage and Peppers Comfort Food

Ingredients
  

For the Sausage and Peppers
  • 1 lb Italian sausage sweet or hot, casings removed
  • 2 Bell peppers any color, sliced
  • 1 Onion sliced
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil
  • 1/2 tsp Dried oregano
  • Salt to taste Salt
  • Black pepper to taste Black pepper
Optional additions
  • 1/4 cup Chicken broth
  • 1 can Diced tomatoes 14.5 oz, undrained

Method
 

  1. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  2. Add the sliced bell peppers and onion to the skillet with the sausage. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes.
  3. Stir in the minced garlic and dried oregano. Cook for 1 minute more until fragrant.
  4. Season with salt and black pepper to taste.
  5. If using, add the chicken broth and diced tomatoes. Bring to a simmer and cook for another 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Serve hot. This dish is great on its own, over pasta, or in a hoagie roll.

Notes

For a spicier dish, use hot Italian sausage and add a pinch of red pepper flakes with the garlic.
