Method
- Place the beef chuck roast in your slow cooker.
- Sprinkle the dry onion soup mix evenly over the roast.
- Pour 1 cup of beef broth around the roast.
- Cover and cook on low for 4 to 6 hours, or until the roast is tender.
- Remove the roast from the slow cooker and place it on a cutting board. Use two forks to shred the beef.
- Drain the liquid from the slow cooker into a saucepan. Stir in the remaining 1 cup of beef broth, Worcestershire sauce, and black pepper. Bring to a simmer over medium heat and cook for 5 minutes.
- Preheat your broiler.
- Place the split hoagie rolls on a baking sheet. Top with shredded beef and provolone cheese, if using.
- Broil for 1 to 2 minutes, or until the cheese is melted and bubbly.
- Serve the sandwiches with the warm au jus for dipping.
Notes
You can adjust the cooking time based on your slow cooker. For a richer au jus, you can skim off excess fat before simmering.
