Ingredients

For the Roast Beef
  • 3 pound beef chuck roast
  • 1 packet dry onion soup mix
  • 1 cup beef broth
For the Au Jus
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon black pepper
For Assembly
  • 6 hoagie rolls split lengthwise
  • 1 cup provolone cheese slices optional

Equipment

  • Slow Cooker
  • Tongs
  • Forks
  • Cutting board
  • Knife
  • Baking sheet

Method

  1. Place the beef chuck roast in your slow cooker.
  2. Sprinkle the dry onion soup mix evenly over the roast.
  3. Pour 1 cup of beef broth around the roast.
  4. Cover and cook on low for 4 to 6 hours, or until the roast is tender.
  5. Remove the roast from the slow cooker and place it on a cutting board. Use two forks to shred the beef.
  6. Drain the liquid from the slow cooker into a saucepan. Stir in the remaining 1 cup of beef broth, Worcestershire sauce, and black pepper. Bring to a simmer over medium heat and cook for 5 minutes.
  7. Preheat your broiler.
  8. Place the split hoagie rolls on a baking sheet. Top with shredded beef and provolone cheese, if using.
  9. Broil for 1 to 2 minutes, or until the cheese is melted and bubbly.
  10. Serve the sandwiches with the warm au jus for dipping.

Notes

You can adjust the cooking time based on your slow cooker. For a richer au jus, you can skim off excess fat before simmering.
