Method
- Preheat your oven to 375°F (190°C). Butter a 10-inch cast iron skillet.
- In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
- Add the softened butter to the dry ingredients and mix with a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spread the batter evenly into the prepared skillet.
- Arrange the sliced peaches over the batter. In a small bowl, combine 2 tablespoons of sugar and the cinnamon, then sprinkle this mixture over the peaches.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean and the peaches are tender.
- Let the cake cool in the skillet for at least 10 minutes before slicing and serving.

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
