Slow Cooker Creamy Tortellini Soup

Ingredients
  

For the Soup
  • 1 pound Italian sausage casings removed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes undrained, 14.5 ounce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 package refrigerated cheese tortellini 9 ounce

Method
 

  1. In a large skillet over medium-high heat, brown the Italian sausage, breaking it up with a spoon. Drain off any excess grease.
  2. Transfer the browned sausage to your slow cooker. Add the chopped onion, minced garlic, chicken broth, diced tomatoes (with their juice), Italian seasoning, salt, and pepper.
  3. Stir everything to combine. Cover and cook on low for 4 hours or on high for 2 hours.
  4. About 15 minutes before serving, stir in the heavy cream and fresh spinach. Add the refrigerated tortellini and stir gently.
  5. Continue to cook, uncovered, until the tortellini are tender and heated through, about 10-15 minutes more. Do not overcook the tortellini.
  6. Serve hot.

Notes

You can substitute ground turkey or chicken for the Italian sausage. If you don't have fresh spinach, you can use frozen spinach, thawed and squeezed dry.
