Slow Cooker White Chicken Chili

Ingredients
  

For the Chili
  • 2 lbs boneless, skinless chicken breasts
  • 1 can diced tomatoes undrained
  • 1 can cannellini beans rinsed and drained
  • 1 can great northern beans rinsed and drained
  • 1 can green chilies diced, undrained
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional
For Serving
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add diced tomatoes, cannellini beans, great northern beans, and diced green chilies.
  3. Pour in chicken broth and sprinkle with taco seasoning, cumin, garlic powder, and cayenne pepper (if using).
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  5. Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker.
  6. Stir to combine and let simmer for an additional 60 minutes.
  7. Serve hot, topped with shredded cheddar cheese, sour cream, and fresh cilantro.

Notes

You can substitute other white beans like navy beans for cannellini or great northern beans.
