  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 1/2 cup buffalo wing sauce your favorite brand
  • 2 tablespoons unsalted butter melted
  • 1/4 teaspoon garlic powder
For the Wraps
  • 2 large low-carb tortillas or lettuce wraps
  • 1/2 cup shredded lettuce
  • 1/4 cup diced celery
  • 1/4 cup crumbled blue cheese optional
  • 2 tablespoons ranch dressing or blue cheese dressing for drizzling

Method
 

  1. In a medium bowl, combine the chicken pieces, buffalo wing sauce, melted butter, and garlic powder. Toss to coat the chicken evenly.
  2. Heat a large skillet over medium-high heat. Add the coated chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.
  3. While the chicken is cooking, prepare your wraps. Lay out the tortillas or lettuce leaves.
  4. Spoon the buffalo chicken mixture evenly onto the center of each tortilla or lettuce wrap.
  5. Top the chicken with shredded lettuce, diced celery, and crumbled blue cheese (if using).
  6. Drizzle with ranch or blue cheese dressing.
  7. Fold or roll the wraps tightly and serve immediately.
