Stuffed Spinach Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6-8 oz each
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Filling
  • 5 oz fresh spinach wilted and squeezed dry
  • 4 oz cream cheese softened
  • 1/4 cup Parmesan cheese grated
  • 1 clove garlic minced

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the filling: In a medium bowl, combine the wilted spinach, softened cream cheese, grated Parmesan cheese, and minced garlic. Mix well.
  3. Prepare the chicken: Place each chicken breast on a cutting board. Carefully slice a pocket into the thickest side of each breast, being careful not to cut all the way through.
  4. Stuff the chicken: Spoon the spinach and cheese mixture evenly into the pockets of each chicken breast.
  5. Season the chicken: Sprinkle the outside of each stuffed chicken breast with salt and pepper.
  6. Sear the chicken: Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until golden brown.
  7. Bake the chicken: Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Rest the chicken: Remove the skillet from the oven and let the chicken rest for 10 minutes before slicing and serving.
