Summer Pasta Salad with Herbs

Ingredients
  

For the Salad
  • 12 ounces Pasta such as rotini or farfalle
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Cucumber diced
  • 1/4 cup Red onion finely chopped
  • 1/2 cup Fresh parsley chopped
  • 1/4 cup Fresh basil chopped
  • 2 tablespoons Fresh dill chopped
For the Dressing
  • 1/3 cup Olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Equipment

  • Large pot
  • Colander
  • Large mixing bowl

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, parsley, basil, and dill.
  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

You can add other vegetables like bell peppers or corn, or protein like grilled chicken or chickpeas. Adjust herbs to your preference.
