Ingredients
  

For the Salad
  • 4 ears corn husks removed
  • 1 head romaine lettuce chopped
  • 1 red bell pepper diced
  • 1/2 cup red onion thinly sliced
  • 1 avocado diced
For the Dressing
  • 1 avocado ripe
  • 1/4 cup lime juice fresh
  • 2 tablespoons olive oil
  • 1/4 cup cilantro fresh, chopped
  • 1 clove garlic minced
  • 2-4 tablespoons water to thin
  • to taste salt
  • to taste black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred. Let cool slightly, then cut the kernels off the cobs.
  3. While the corn cools, prepare the dressing. Combine the ripe avocado, lime juice, olive oil, cilantro, garlic, salt, and pepper in a blender.
  4. Blend until smooth, adding water 1 tablespoon at a time until you reach your desired consistency.
  5. In a large bowl, combine the chopped romaine lettuce, grilled corn kernels, diced red bell pepper, sliced red onion, and diced avocado.
  6. Pour the avocado lime dressing over the salad and toss gently to combine.
  7. Serve immediately.

Notes

You can add grilled chicken or shrimp for extra protein. For a spicier dressing, add a pinch of chili powder or a small jalapeño.
