- Preheat your grill to medium-high heat.
- Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred. Let cool slightly, then cut the kernels off the cobs.
- While the corn cools, prepare the dressing. Combine the ripe avocado, lime juice, olive oil, cilantro, garlic, salt, and pepper in a blender.
- Blend until smooth, adding water 1 tablespoon at a time until you reach your desired consistency.
- In a large bowl, combine the chopped romaine lettuce, grilled corn kernels, diced red bell pepper, sliced red onion, and diced avocado.
- Pour the avocado lime dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
You can add grilled chicken or shrimp for extra protein. For a spicier dressing, add a pinch of chili powder or a small jalapeño.
