Sunny-Side Up Fried Eggs

Ingredients
  

For the Eggs
  • 1 egg
  • 1 tsp butter
  • 1 salt to taste
  • 1 black pepper to taste

  • carbon steel skillet
  • nonstick skillet
  • glass lid

Method
 

  1. In a cast iron, carbon steel, or nonstick skillet, melt butter over medium heat until lightly foaming. Tilt the pan to evenly distribute the butter.
  2. Carefully break the egg into the skillet. Season with salt.
  3. Cover with a glass lid and cook until the whites are just set, about 1 minute and 30 seconds.
  4. Remove the lid and continue to cook for another 1 minute and 30 seconds, or until the whites are completely set and the yolks are still runny.
  5. Transfer the egg to a plate, season to taste with salt and pepper, and serve immediately.
