Ingredients
  

For the Chicken
  • 1.5 pounds chicken breasts
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 lime juice only
For the Wraps
  • 6 large tortillas or wraps
  • 1 medium Daikon radish shredded
  • 1 cup cucumber diced
  • 2 cups carrot shredded
  • 1/2 red onion sliced
  • 1 sweet peppers chopped
  • green lettuce
  • fresh cilantro garnish
  • sweet chili sauce garnish

Method
 

  1. In a medium pot, combine chicken, sweet chili sauce, soy sauce, and lime juice over medium heat. Cover and simmer for 15-20 minutes, stirring occasionally, until chicken is cooked.
  2. Shred the cooked chicken into chunks. Uncover the pot, reduce heat to low, and let the chicken simmer and thicken while you prepare the toppings.
  3. Wash and dry lettuce. Shred carrots and prepare other vegetables.
  4. To assemble a wrap, lay lettuce on a tortilla. Top with shredded vegetables and a spoonful of chicken (drain excess liquid). Drizzle with extra sweet chili sauce and roll up. Serve immediately.
