  • 4 cups frozen shredded hash brown potatoes thawed
  • 2 cups shredded cheddar cheese

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crisp. Drain off any excess fat.
  3. In a large bowl, combine the eggs, thawed hash brown potatoes, cheddar cheese, cottage cheese, and Swiss cheese. Stir in the cooked bacon and onion mixture.
  4. Transfer the mixture to a greased 13x9-inch baking dish.
  5. Bake uncovered for 35-40 minutes, or until a knife inserted into the center comes out clean.
