  • 1/8 teaspoon black pepper or to taste

Method
 

  1. Crack the eggs into a bowl. Add the milk, plant milk, or water, salt, and pepper.
  2. Whisk the ingredients together until well combined and slightly frothy.
  3. Heat the olive oil or butter in a non-stick skillet over medium-low heat until shimmering.
  4. Pour the egg mixture into the hot skillet. Let it cook undisturbed for about 30 seconds, until the edges begin to set.
  5. Gently push the cooked egg from the edges toward the center with a spatula, allowing the uncooked egg to flow underneath. Continue this process until the eggs are mostly set but still slightly moist.
  6. Remove the skillet from the heat. The residual heat will continue to cook the eggs to your desired consistency.
  7. Serve immediately.
