Ingredients
  

For the Chicken
  • 1/4 cup oil-packed sun-dried tomatoes chopped
  • 1 lb boneless chicken breasts or thighs cut into 1-inch pieces
  • 1 tbsp Italian seasoning your own mix or store-bought
  • 2 tbsp salted butter
  • 2 cloves garlic minced
For the Pasta
  • 8 oz dry shortcut pasta such as rotini or penne
  • 1/4 tsp chili flakes optional
  • 2 cups whole milk
  • 4 oz cream cheese cubed
  • 1/2 cup parmesan cheese grated
  • 1/4 cup fresh Italian basil chopped

Method
 

  1. Cook the pasta according to package directions. Drain and set aside.
  2. While the pasta cooks, melt the butter in a large pot over medium heat. Add the chicken pieces and Italian seasoning. Cook until the chicken is browned on all sides, about 5-7 minutes.
  3. Add the minced garlic and chili flakes (if using) to the pot with the chicken. Cook for 1 minute until fragrant.
  4. Pour in the milk and add the cream cheese. Stir until the cream cheese is melted and the sauce is smooth. Bring to a gentle simmer.
  5. Stir in the grated parmesan cheese until melted. Add the cooked pasta and sun-dried tomatoes to the pot. Toss to combine everything with the sauce.
  6. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the pasta and chicken.
  7. Stir in the fresh basil just before serving.
  8. Let the mixture rest for 10 minutes before serving to allow flavors to meld.

Notes
