Ingredients
  

For the Breakfast Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham black forest or any kind
  • 1/3 cup finely shredded cheese Mexican cheese used
  • 1 tsp chives finely chopped
  • Salt and Pepper to taste
  • 1 Tbsp olive oil or butter to saute

Equipment

  • Skillet
  • Toaster

Method
 

  1. Toast the english muffin halves in a toaster.
  2. Heat olive oil or butter in a skillet over medium heat.
  3. Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
  4. Place the cooked eggs onto one half of the toasted english muffin.
  5. Layer the ham slices over the eggs.
  6. Sprinkle the shredded cheese and chopped chives over the ham.
  7. Place the other half of the english muffin on top to complete the sandwich.

Notes

To make two sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan simultaneously.
