Method
- Toast the english muffin halves in a toaster.
- Heat olive oil or butter in a skillet over medium heat.
- Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
- Place the cooked eggs onto one half of the toasted english muffin.
- Layer the ham slices over the eggs.
- Sprinkle the shredded cheese and chopped chives over the ham.
- Place the other half of the english muffin on top to complete the sandwich.
Notes
To make two sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan simultaneously.
