Turkey & Veggie Zucchini Skillet

Ingredients
  

For the Sauce
  • 1/4 cup soy sauce
  • 2 Tbsp brown sugar
  • 1 tsp sesame oil
  • 1 clove garlic, grated
  • 1 tsp grated ginger
  • 1 Tbsp cornstarch
  • 2 Tbsp water
  • 1 tsp chili garlic sauce
For the Skillet
  • 1 small onion diced
  • 1 large zucchini about 3/4 lb, sliced into rounds, then quarters
  • 1 Tbsp cooking oil
  • 1 lb ground turkey

Method
 

  1. Make the sauce: Combine soy sauce, brown sugar, sesame oil, grated garlic, grated ginger, cornstarch, water, and chili garlic sauce in a bowl. Mix well and set aside.
  2. Dice the onion. Slice the zucchini into rounds, then cut the rounds into quarters.
  3. Heat a large skillet over medium heat and add the cooking oil. Add the diced onion and chopped zucchini. Sauté for 4-5 minutes until the onion is translucent and the zucchini is lightly browned. Remove the vegetables to a separate plate.
  4. In the same skillet, add the ground turkey. Crumble and cook until browned.
  5. Return the sautéed vegetables to the skillet with the browned turkey. Stir the sauce again, then pour it over the turkey and vegetable mixture.
  6. Stir everything together and let the sauce simmer for 2 minutes to thicken.
  7. Remove the skillet from heat. Serve hot with optional toppings like sliced green onions, red pepper flakes, sesame seeds, and cooked rice.
