Ingredients
  

For the Tots
  • 10 oz frozen cauliflower rice cooked until dry
  • 1 cup cottage cheese 4% milkfat or full-fat, blended until smooth
  • 1/4 cup shredded mozzarella cheese packed
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

  • Non-stick skillet
  • Blender or food processor
  • Large bowl

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat a non-stick skillet over medium heat. Add the frozen cauliflower rice to the dry skillet. Stir occasionally and cook until most of the moisture has evaporated and the cauliflower rice is fluffy. Remove from heat and set aside.
  3. While the cauliflower rice is cooking, place the cottage cheese in a blender or food processor. Blend until smooth and creamy.
  4. In a large bowl, combine the cooked cauliflower rice, blended cottage cheese, mozzarella cheese, parmesan cheese, garlic powder, and salt. Mix well.
  5. Scoop about 1 tablespoon of the mixture and shape it into a tater tot. Place each tot on the prepared baking sheet, leaving about ½ inch of space between them.
  6. Bake for 27-30 minutes, or until golden brown. Let the tots cool for a few minutes before serving.

Notes
