Ingredients
  

For the Pizza Base
  • 1 large Watermelon about 10-12 inches in diameter, rind removed, sliced into 1-inch thick rounds
For the Topping
  • 8 oz Cream cheese softened
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Mixed berries such as blueberries, raspberries, sliced strawberries
  • 1/4 cup Kiwi sliced
  • 1/4 cup Mandarin oranges drained

Method
 

  1. Prepare the watermelon base: Place a thick watermelon round on a cutting board. Pat it dry with paper towels.
  2. Make the cream cheese frosting: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Assemble the pizza: Spread the cream cheese mixture evenly over the top of the watermelon round, leaving a small border.
  4. Decorate with fruit: Arrange the mixed berries, kiwi slices, and mandarin oranges over the cream cheese layer to create your desired design.
  5. Chill: Cover the fruit pizza loosely with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the frosting to set slightly.
  6. Serve: Slice the watermelon berry fruit pizza into wedges and serve immediately.

Notes

You can customize the fruit toppings based on what is in season or your preferences. Other good options include grapes, pineapple chunks, or mango slices.
