Watermelon Chia Parfait

Ingredients
  

For the Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups almond milk or other milk
  • 2 tbsp maple syrup or to taste
  • 1 tsp vanilla extract
For the Watermelon Layer
  • 2 cups cubed watermelon
For the Fruit Layers
  • 1 cup mixed berries e.g., strawberries, blueberries, raspberries
  • 1 cup diced mango

Method
 

  1. Make the chia pudding: In a bowl, whisk together chia seeds, almond milk, maple syrup, and vanilla extract. Let it sit for 5 minutes, then whisk again to prevent clumping. Cover and refrigerate for at least 2 hours, or until thickened.
  2. Prepare the watermelon layer: Blend the cubed watermelon until smooth. You can strain it if you prefer a smoother consistency.
  3. Assemble the parfaits: In serving glasses, layer the ingredients. Start with a layer of chia pudding, followed by watermelon puree, then mixed berries, another layer of chia pudding, diced mango, and finish with a final layer of chia pudding.
  4. Chill the parfaits for at least 30 minutes before serving to allow the flavors to meld.

Notes

You can adjust the sweetness of the chia pudding to your preference. Feel free to use any fruits you have on hand for the fruit layers.
