Ingredients
  

Salad
  • 4 cups cubed watermelon seedless
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice fresh
  • 1/4 teaspoon black pepper freshly ground

  • Large bowl

Method
 

  1. Combine the cubed watermelon, crumbled feta cheese, and chopped mint leaves in a large bowl.
  2. In a small bowl, whisk together the olive oil, fresh lime juice, and black pepper.
  3. Pour the dressing over the watermelon mixture and toss gently to combine.
  4. Serve immediately.

Notes

For an extra crunch, you can add some toasted pine nuts or slivered almonds.
