Ingredients
  

For the Salsa
  • 4 cups Seedless watermelon diced
  • 1 Red onion finely chopped
  • 1 Jalapeño seeded and minced
  • 1/2 cup Fresh cilantro chopped
  • 1 lime Lime juice freshly squeezed
  • 1/4 teaspoon Salt or to taste

  • Large bowl

Method
 

  1. Combine the diced watermelon, chopped red onion, minced jalapeño, and chopped cilantro in a large bowl.
  2. Squeeze the fresh lime juice over the mixture.
  3. Add salt to taste.
  4. Gently toss all ingredients together until well combined.
  5. For best results, let the salsa sit for at least 10 minutes before serving to allow the flavors to meld.

Notes

This salsa is best served fresh. You can store any leftovers in an airtight container in the refrigerator for up to 2 days, though the watermelon may release more liquid over time.
