For the Sandwich
  • 6 tablespoons butter softened, divided
  • 8 slices sourdough bread
  • 4 ounces Brie cheese rind removed and sliced
For the Spread
  • 3 tablespoons mayonnaise
  • 3 tablespoons finely shredded Manchego or Parmesan cheese
  • 1/8 teaspoon onion powder
For the Cheese Mixture
  • 1/2 cup shredded sharp white cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese

Method
 

  1. Spread 3 tablespoons butter on 1 side of the bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes. Remove the toasted bread.
  2. In a small bowl, mix together the mayonnaise, Manchego cheese, onion powder, and the remaining 3 tablespoons of butter to create the spread. In another bowl, combine the cheddar, Monterey Jack, and Gruyere cheeses.
  3. To assemble the sandwiches, place the sliced Brie cheese on the toasted side of 4 bread slices. Sprinkle the combined cheddar cheese mixture evenly over the Brie.
  4. Top with the remaining 4 bread slices, ensuring the toasted side faces inward. Spread the mayonnaise mixture on the outsides of each sandwich.
  5. Place the assembled sandwiches in the same skillet. Cook until the bread is golden brown and the cheese is melted, about 5-6 minutes on each side. Serve immediately.
