- Adjust your oven rack to the upper-middle position. Preheat your oven to 425 degrees F.
- Line a baking sheet with aluminum foil. Place a wire rack on top and spray the rack with non-stick spray.
- Pat the chicken wings very dry with paper towels. Place them in a large bowl.
- In a small bowl, combine the salt, pepper, garlic powder, paprika, and baking powder. Sprinkle this mixture over the wings and toss to coat evenly.
- Arrange the seasoned wings in a single layer on the prepared wire rack, skin side up.
- Bake on the upper-middle oven rack for up to 1 hour, turning every 20 minutes, until the wings are crispy and browned. The exact time will depend on the size of your wings.
- Remove the wings from the oven and let them stand for 5 minutes. Transfer the wings to a clean bowl and toss with your desired sauce.
- To make the Buffalo sauce: In a medium saucepan over medium heat, stir together the hot sauce, brown sugar, and water. Cook, stirring, until the sugar dissolves. Remove from heat and let cool to room temperature before tossing with wings, or prepare ahead and refrigerate.
